Okinawa Spinach is a non-native, Florida-friendly perennial sprawling mound that can grow to be 2’-3’ tall and wide. They grow well in full sun and partial shade and well-drained organic soil. These plants are very tolerant of the Florida heat, producing crisp, bicolored leaves with a deep green top and dark purple underside. The leaves can be enjoyed raw in salads and smoothies, or cooked into soups and stir-fries.
